My friends know well that I am not feeling very confident when talking about my cooking and not bold enough to change a classic recipe and add my personal “mark” …. I always prefer to go by the book and follow chef’s guidelines.
I presume I have to go back to my days as a kid in the kitchen with my grandmother to find out the origins of this hesitation ….
